Enjoying some respite

After a week in France, it's time to settle down and enjoy some respite.  I'm not talking about rest.  I'm talking about Respite - a delightful 2006 Cabernet Sauvignon from the Reichel Vineyard in Alexander Valley, California.

Respite has a nice aroma that has some berry tones that remind me of cassis.  It is a full bodied wine with a lot of structure that has a great feel in the mouth.  It needs to be decanted for a half hour before enjoying.  It will age nicely for many years to come, if you can resist opening it now!  One thing that I enjoy doing with wine is swirling it in a fine wine glass ane examining how it coats the glass.  The way it adheres is sometimes referred to as "having legs."  Respite has great legs!

Tonight I'm enjoying a glass with a home made pizza.  The pizza is a plain thin crust topped with thinly sliced aged Italian ReNero Pecorino Stagionato ewes-milk cheese, carmelized onions, roasted garlic, walnuts, freshly ground black pepper and thinly sliced dates.  Just after it came out of the oven, a dash of Kosher salt was added for finish.  It pairs perfectly well with the Respite.

The wine maker is from the family responsible for wines at Latour.  Respite might be hard to find because only 280 cases were produced.  I bought mine through "the wine club" (http://www.thewineclub.com/) but it was just one of 5 cases they had left at the time.  I hope you can track down a bottle and enjoy it.

First wine pick for 2010

This week's wine pick is a 2005 Cabernet Sauvignon from Geyser Peak Winery in Alexander Valley, California.

With a rating of 87 from Wine Enthusiast, this seemed like the right choice for today's simple supper.  We had a chili and rice casserole topped with aged cheddar.  The label recommends enjoying this wine with mature cheeses!  For my pallet this wine tasted higher than an 87 point cab.

The wine has a nice feel.  It's flavorful and has smooth consistency on the pallet.  This 2005 is ready for drinking now!  It would not hurt to decant it and consume with your favorite dish.  This wine is a very good value!  Be sure to save some for after dinner with a dark chocolate.  Enjoy!

My wine pick for Sunday 6 December 2009

My wine tonight with dinner was 2002 Chateau St. Jean Cinq Cepages.  This translates from the French to mean Five Grapes - or more specifically five varieties of grapes.  This Cabernet Sauvignon is more a meritage since it's comprised of five grape varieties.  It's a bordeaux style of wine.

This wine drinks very smoothly now.  Wine Enthuiast gives this a rating of 90 and lists the price as $75, but I've found it in the Cedar Valley area for about $45.  While some would suggest waiting to drink this or decanting it for several hours before serving, I'd say go out and buy it and drink it now!  The aroma and taste has blackberries in the background.  It's a dry wine but very flavorful.

For food pairings tonight, we had the following as our main course:  Loin of pork marinated in a root beer reduction and slow roasted with a mustard glaze.  The wine's richness and good body went very well with the pork.

And, as always, it goes very well with Ghirardelli 72% cacao intense dark chocolate!
